Guess what time it is…yep, you guessed it (well, maybe…or maybe you had no idea) BUT…it’s Recipe Redux time again. This month we were challenged to create a “power bowl” and to be honest, I’d never really done that. So this was my first attempt and I must say…I feel like it was a huge success. It was simple and easy, packed with some pretty legit nutrition and SO DELICIOUS.
If you’re wondering “what the heck is a power bowl?” well, you’re not alone. Power bowls are quickly gaining popularity and in a way, kind of taking the place as a “new and improved” salad. Don’t get me wrong, I love me a good salad but power bowls are kind of a more “hearty” bowl. They usually use a whole grain or high protein base (ie. brown rice, quinoa, beans) and then they pack in the veggies…any and all the veggies you can think of! And top it off with a healthier dressing replacement such as…guacamole, hummus, balsamic, etc.
So, here’s what’s in my power bowl…
- 1/3 cup low-fat cottage cheese
- 1/3 cup spinach (or other lettuce)
- 5 baby carrots, sliced
- 1/3 cucumber, sliced
- 1/4 avocado, sliced
- 3 oz. grilled chicken, chopped
- 2 Tbsp. sundreid tomato hummus
- Sprinkle of pepper
- Well…throw it all into a bowl and devour your power (bowl)! 😉
