Hope you enjoy following along and I hope I enjoy my time there…without getting kidnapped and murdered or something…fingers crossed!
Food-wise, you know me, always overly-prepared. Here are the healthy snacks I have ready to go for my trip. I’ll be spending a LOT of time on airplanes and am hoping to avoid the completely over-priced airport food as much as possible. I also have lots of extra snacks because I’ll be responsible for my own lunches in Nepal (breakfast and dinner will be provided…yay!). It’s a little difficult to keep produce fresh in this situation…the whole ‘traveling across the world for two weeks’ thing, so hopefully I’ll be able to buy my fresh food/produce there and then these non-perishable (less-perishable foods) will help tide me over.I. CAN’T. WAIT.
