Well maybe it’s 10:30 on Friday night (and maybe I’m at home, almost ready for bed…) but I AM blogging. I refuse to miss a day of my new blogging schedule the first week! Although, next week I’m going to miss the whole week because…I’m headed to my favorite place on this earth. LAKE POWELL. I can’t even tell you, so so so excited. This is a much needed vacation. Some rest and relaxation away from all the cares of the world. Away from technology and away from distractions. Just me, my family and friends, the lake and lots of good food.
It can be pretty difficult to eat healthy at Powell because our Powell trips look something like this…
I’m pretty sure I wouldn’t even know what a Lake Powell trip was without out Costco sized tubs of Red Vines, Jelly Bellies and Hi-Chews. And believe me, I’ll be indulging in these tasty treats. BUT in order to keep a little balance in my life…and not go into a sugar coma. I decided to hit the grocery store and prepare a bag of healthy snacks to have on hand so that I can (hopefully) turn to those at least some of the time.
Boom Chicka Pop Lightly Salted Popcorn
Berries (Strawberries & Blackberries)
Rice Cakes (laugh if you will, but I love em’!)
Fruit (Apples, Peaches & Bananas)
Quest Bars (duh!)
