It’s RECIPE REDUX time again. This month’s theme was a recipe using some fantastic summer veggies and/or fruit. This was the first thing that came to my mind.
My mom used to always make this delicious Skinny Broccoli Salad when I lived that home that I was obsessed with. It was one of our favorite summer side dishes. The other day I got a hankering for it and decided to make my own version. The original version is pretty healthy but I thought “Hey, maybe I could healthify it even more” because, you know, that’s what I like to do. And I did. And it was great. Like really great. So here we have the SkinnIER Broccoli Salad. It’s only 45 calories per 1/2 cup serving and it is pretty darn tasty. This is definitely going to be a summer stable in my kitchen his year…and for years to come.
SkinnIER Broccoli Salad
1 head broccoli
1 head cauliflower
1 red bell pepper
1 green bell pepper
1 medium-large tomato
1/2 red onion
2 light string cheeses (or other shredded cheese)
1/3 cup light ranch dressing (or homemade ranch)
- Chop all veggies and cheese (if not shredded) into small, bite-sized pieces and mix together.
- Add ranch dressing and stir/toss until all veggies and cheese are lightly coated
- Stick in the refrigerator for a couple of hours or overnight. You can eat it immediately but tastes WAY better if you let it for a while and let all the flavors combine. Promise.
