1 can (3 oz.) canned chicken
2 Tbsp. Greek Feta salad dressing
1 Tbsp. light mayo
1/2 cup red grapes, sliced
1/4 cup cashews, chopped
1 stalk celery, chopped
Pepper to taste
1. Drain the chicken
2. Chop grapes, celery and cashews
3. Mix all ingredients together until combined
4. Stuff into a tomato, pita, on bread…or just by itself and enjoy!
As a side note…I ran my LAST long training run (12 miles) before my half marathon this past Saturday. YEAH. It was a struggle. A real struggle. I recently found out I have anemia (long story) so running has not been easy lately. I’m much slower than I used to be and I have to take breaks to stop and walk but I’m going to finish my training and do the half…not worrying about my time. Just worrying about finishing. Stay tuned for a post that will be up soon with tips on avoiding anemia…so you don’t end up in my shoes!
