It’s that time again…Recipe Redux time! For May the theme was:
“A favorite kitchen stable that you now make from scratch, but in the past you purchased. A favorite DIY recipe for keeping the cupboards, fridge or freezer stalked with healthy basics.”
So I decided to make one of my favorite homemade recipes…mayo! I LOVE mayo but it’s not exactly the healthiest condiment so a while ago I started making my own. I looked at a few recipes and combined ingredients of each of them into what I thought would be a great mayo…and…success. It’s paleo too…so if you’re into that…you’re welcome. I’m a big garlic fan so this Garlic Rosemary Mayo hit the spot. I put it on…um everything I can think of…sweet potato fries, veggies, sandwiches, wraps and use it as a dipping sauce for turkey sausage or any other meat. It just adds that extra punch of awesomeness. It’s like a party in your mouth. A garlicy, delicious party.
Garlic Rosemary Mayo
1 egg yolk (pasteurized), room temperature
2 Tbsp. lemon juice
1/2 tsp. ground mustard
1 cup olive oil
2 garlic cloves
1/2 tsp. dried rosemary
1. Place egg, lemon juice, and ground mustard in a food processor or blender. Pulse until 2-3
2. Slowly add the oil little by little while pulsing in-between until thickened to mayo texture
3. Add the garlic and rosemary and pulse until combined wellAfter I made it I immediately needed to eat some (duh) so I dipped some turkey sausage and bell peppers in this tasty mayo and had some fruit on the side. It made quite the tasty post-church lunch.
