So…I had a wrap for lunch yesterday. Surprise, right? Story of my life. I just love them so much and they are a quick and easy pre-workout meal before I run to the gym in the afternoons. Yesterday’s was pretty delicious. I’ve been trying to use less dressing/spreads because they often contain quite a bit of sugar and saturated fats…as a “replacement” I’ve been using MORE avocado. If you mash it up, it’s basically like a healthier “spread”. Whenever I order sandwiches or wraps when I go out to eat, I’ll usually ask them to replace the mayo or ranch on something with guacamole/avocado if they have it [Yeah, I’m that girl. So annoying, I know.]. It’s a simple and tasty way to add healthy fats in the place of less healthy fats. Can’t go wrong with that. Well, unless you don’t like avocado…if you don’t like avocado…um, well you’re crazy but I guess you can omit it if you must… So here is yesterday’s wrap.
Grilled Chicken Wrap…with LOTS of Veggies
- 1 tortilla (I used a flatout wrap – tried the Sundried Tomato flavor for a change…a.m.a.z.ing)
- 1/4 medium avocado, sliced or mashed
- 3-4 oz. grilled chicken
- Tomato, sliced
- Cucumber, sliced
- Green bell pepper, sliced
- 1 Tbsp. feta cheese
Um…put it all in the tortilla, wrap it up (if you can…mine are always SO full) and enjoy!
