Fact: there is no better flavor than funfetti. You know it’s true. Funfetti is the best flavor ever invented. As a side note: WHY did they discontinue Rainbow Chip Frosting?? That was probably the worst idea in the world. Ever. Moving along…I’ve been on some sort of weird funfetti kick lately, craving all things funfetti but wanting to keep it on the healthier side…so I’ve been doing some experimenting with healified versions of funfetti recipes.
Two of my most recent experiments:
First. Funfetti Cookie “Dough” Bites
- 5 tsp. flour oat flour (or white flour)
- 1/16th tsp. baking soda
- 1/16th tsp. salt
- 2 tsp. oil or melted butter-type spread
- 1/4 tsp. pure vanilla extract
- 1 tsp. rainbow sprinkles
- 1/2-1 Tbsp. dark chocolate chips
- 3/4 tsp. sweetener of choice (or 2 tsp. regular sugar)
- 1 tsp. milk of choice (as needed)
Preheat the oven to 350 degrees. Combine dry ingredients, then add wet and mix with a fork. Form into three little balls. (Do not smush.) Cook for 8-9 minutes. Take out when still a bit undercooked, so they don’t get hard, and wait at least 5 minutes before trying to remove from tray. Store in a plastic container.
1/3 c. old-fashioned oats (gluten-free if needed)
1/3. c skim milk or almond milk
1/3 cup plain greek yogurt
¼ tsp. butter extract
1-2 tsp. rainbow sprinkles
Sweetener, to tasteDirections
Combine all ingredients except rainbow sprinkles and mix together in a container. Place in fridge overnight. In the morning sprinkle with rainbow sprinkles and eat up!
