The biggest dilemma in my life…how not to waste those last few bites of peanut butter that are almost unreachable in the nearly-empty peanut butter jar. I just can’t let myself throw it out knowing there is still a little bit of goodness left inside. The solution: Overnight Oats in the almost-empty jar. Plus, then it’s already packed and ready for you to take on your way out the door the next morning.
My most recent overnight oats endeavor was Banana Peanut Butter Oats. And they. were. good.
- 1/4 cup oats
- 1/3 cup vanilla or plain greek yogurt
- 1/3 cup low-fat milk (or other milk of choice)
- 1 tsp. chia seeds
- 1/2 sliced banana
- 1 almost-empty jar of natural peanut butter (or 1-2 Tbsp. peanut butter).
Mix all ingredients together in empty pb jar or in another container. Put in fridge overnight and enjoy the next morning!
