Michelle Rubin: What’s wrong with that?
I thought I’d post about what I actually eat in a day. It’s nothing too earth-shattering or exciting but here it is. Hopefully it can give you some ideas. Also, not quite everything I ate is pictured. I forgot to take pictures of a few things. Plus, I’m pretty sure my family, friends and co-workers are starting to think I’m a little weird snapping pictures of all of my food. Oh well.
Breakfast – Greek Yogurt + Granola.
I like Dannon light and fit greek yogurt because it’s only 80 calories and has a lot less sugar than many of the other greek yogurt brands. I measure out 1/4-1/3 cup of granola because it’s one of those things that is a good choice but high in calories and can add up if you go overboard on your portion size. I often tell my clients and patients to use measuring cups to dish up their food and well, I try to practice what I preach. I don’t always use them, but I try to on certain foods at least.
Lunch – Veggies + Hummus, String Cheese and an Apple
I like to slice up a bunch of veggies and put them in bags to take to work. It’s a great way to get a few of your veggie servings in during they day. You can use whatever veggies you like. I usually do a mixture of: grape tomatoes, baby carrots, sliced bell pepper, sliced cucumber and celery sticks. Sometimes broccoli and/or cauliflower. Whatever I have really. To add in some healthy fats and because it’s delicious I bring along some hummus (individually packed at Costco) to dip my vegetables in. I also had a ‘light’ string cheese – only 50 calories and gives you 6 grams of protein. Plus, it makes me feel like a kid again. A little later I finished off my lunch with an apple. I like to slice it up beforehand because it’s less messy and easier to snack on while I’m working. I’m very particular about my apples. If you’ve never tried Braeburn or Cameo apples – you’re missing out my friend! You’ve gotta try them.
Snack – Nature Valley Granola Thin with Dark Chocolate + Strawberries and Blueberries
I can never make it through the afternoon without a snack. I usually start having a major sweets craving about 3:00 pm so I like to bring along a little something sweet. This day I packed a Nature Valley Granola Thin (Dark Chocolate). Sooo good. I also packed some berries to go with it. Strawberries and blueberries. They taste great together and blueberries are a super-food. So bam!
Dinner – Teriyaki Marinated Chicken + Grilled Vegetables and Pineapple, Brown & Wild Rice
For dinner we had one of my favorites. Super easy and so freaking good. We just marinated some chicken breasts in teriyaki marinade, drizzled some sliced zucchini, mini sweet peppers and mushrooms with olive oil and a little garlic salt, sliced some pineapple and threw it all on the grill for a bit. We also cooked up some packaged Farm House Brown & Wild rice. A recent discovery, and an awesome one. I officially love it. Plus it adds another whole grain to your day. So yeah.
I’m pretty sure later that evening I had some popcorn and/or frozen yogurt. But again, it didn’t end up getting pictured. So use your imagination.
