So sometimes I’m feeling super lazy…well actually a lot of the time. So the less complicated a meal is to prepare, the better in my mind. Hence this breakfast. Super easy and has your carbohydrates, protein AND healthy fats . So you’ve got all your bases covered. I feel almost silly writing it up as a “recipe” because it’s really just stacking a few things together on toast…it would basically be like writing a recipe for PB&J so I’ll just tell you what I did.
Just take a piece of wheat bread, toast it, take a tomato and an avocado and cut off a few slices of each. Then fry an egg, I like mine with the yolk still runny. Some people think that’s gross but I love it! Then just top your toast with the egg, tomato and avocado! I added some fruit (red grapes, watermelon, strawberries) on the side to help fill me up and well, because they’re delicious.
