When you’re busy with work, school, kids and/or whatever else you have going on in your life, eating healthy lunches can be difficult. Difficult…but not impossible. Most days I take a lunch to work. I find that packing and bringing a lunch is the best option when trying to eat healthy. Sometimes your workplace or the nearest sandwich shop can provide healthy options but if you already have a lunch prepared that you made yourself…
A. you know exactly what foods went into making it (which I’m a fan of) and
B. you aren’t going to be tempted by all the not-so-healthy options also offered right next to the
I’ve said it before, and I’ll say it again. Preparation is key! I have some easy and healthy lunch ideas below but without taking time ahead of time prepare it usually won’t happen. I try to prep my lunches the night before so that when I’m rushing out the door in the morning packing a lunch isn’t one of the things I’m trying to get done last minute. You can also prepare a lot of things in “bulk” so they will last for a few lunches instead of just one.
That being said, I present to you.
Healthy and Easy Lunch Ideas…TO GO
1. Prepared (Costco) “Vineyard” Greek Yogurt Chicken Salad
This is pretty much as easy as it gets. I found this great chicken salad (Vineyard brand) made with greek yogurt at Costo. It’s one of my favorite to-go lunches because it’s already pre-packaged into single servings. I just grab a few crackers and some carrots and an apple and my lunch is ready to go!
Again…COSTCO has great single-serving hummus packets. They make a great lunch addition. The night before I’ll cut up a bunch of veggies (usually cucumbers, carrots, celery, grape tomatoes and bell pepper) throw them in a bag and slice up an apple o go with it. I usually add a low-fat string cheese and sometimes some crackers and my lunch is ready to go first thing in the morning!
I love salad, but if you eat it too often it CAN get boring so I try to switch it up. I’ve blogged this recipe before but one of my favorite lunches to take to work is my Chicken Strawberry Cashew Salad. I prep it and put it in a Tupperware container the night before and put some ranch in a little to-go cup so my salad doesn’t get soggy. Then grab some fruit (usually an apple…I LOVE apples . I eat at least one basically every single day!) to go with it and I’m good to go!
Cook a batch of whole-wheat pasta that can be stored in the fridge and used for several lunches. In the morning just drizzle olive oil on top, pack with some chopped veggies and cheese (cubed or shredded) to top the pasta with later. Grab some fruit too and bam…there’s lunch!
Top a pita with some cheese and veggies and cook in the microwave for about 1-2 minutes. Add a side of fruit (like grapes, blueberries, etc.) and a handful of nuts and there ya go! Yummy, healthy and packed-to-go lunch!
Simply take a wheat tortilla spread some peanut butter on it, slice up a banana and place the slices on the peanut butter wrap, roll it up and add a side of veggies and fruit (i.e. pictured: blueberries, grapes, kiwi, carrots) and you’ve got an awesomely delicious and easy lunch to go!
This is another one I’ve blogged before but also a favorite to-go lunch of mine. It’s nice because you can prep a bigger batch and it will be good for at least a few days so you can use it for a few lunches. Just cook some chicken tenders (when I’m feeling extra lazy I just microwave them until they are cooked through – make sure they’re all the way cooked though!) then I chop up some pineapple, strawberries, grapes and avocado. Mix in a little light mayo and poppy-seed dressing and put it in a Tupperware. I add some crackers and veggies (usually some baby carrots) and I’m ready for the day!
Slice a pita like a pizza and spray both sides with cooking spray. Season with salt, pepper, and garlic powder. Cook in a 400 degree oven for 10 minutes or so and add some tuna salad (canned tuna + light mayo and whatever else you like…celery, pickles, etc.). Add some strawberries, blackberries, celery and baked chips and you’re ready to go!
